Hermione's met people who were beyond saving. She'd wrestled with that thought, but after seeing the pure evil behind people like Bellatrix and Greyback, she's fairly certain that there are some people who simply aren't worth trying to redeem. But the idea that these mages had acted the way they had because of demonic possession, and they could have been freed from that and subsequently spared... that's a different matter altogether.
